Medallions of Bison
with Saskatoon Berry Sauce
Ingredients:
6 medallions of bison
salt and pepper for seasoning
flour to coat meat
1 tbsp vegetable oil
1 tbsp butter
1/2 oz brandy
1/3 cup Saskatoon Berry Puree
2 tbsp demi-glace
1/2 cup Saskatoon or Blueberries
Directions:
- Season medallions with salt and pepper (both sides)
- Flour lightly on one side
- Heat Sautéing pan over high heat
- Add vegetable oil and butter
- Place meat flour side down in pan
- Sauté medallions - each side for 3 minutes
- Remove meat from frying pan and keep warm on the side
- Add berries to the frying pan
- Sauté for 1 minute
- Deglaze pan with brandy
- Add Saskatoon Berry Puree and demi-glace
- Reduce slowly for 3-4 minutes
- Add medallions to the sauce
- Simmer lightly for 1 more minute
- Serve medallions - 3 to a plate
- Spoon sauce over the meat - lightly
